Accidentally 'healthy' cookie recipe

I love baking and I'm not usually one to try and adapt recipes to make them healthier. If I'm baking cookies, lets face it, I'm after the real deal.

However, I recently found myself with a jar of almond butter and no bloody idea what to do with it. It wasn't as satisfying a replacement for peanut butter as I'd hoped, but I vaguely remembered seeing a recipe for almond butter choc chip cookies. A quick google later and I was hot-footing it to the kitchen.

Now I'm not going to pretend these are healthy. I saw exactly how many chocolate chips went into these bad boys. But, if you're looking for a *slightly* more virtuous, gluten free cookie option, I can vouch that these are the bee's knees. You really don't miss, or even notice the lack of flour. These are gooey, chewy cookie goodness at its best. Plus they're super easy to make. Win win I say.

Even the husband (who is as anti-gluten/dairy/sugar/salt free as you can get!) wolfed four of these within minutes and declared them my best cookie effort yet. Quite the compliment indeed ;)


  • 1 large egg
  • 250g almond butter, at room temperature or cold
  • 90g light brown sugar
  • 1 teaspoon bicarbonate of soda
  • 190g chocolate chips


Preheat your oven to 180 degrees and line two baking sheets with greaseproof paper.
Beat the egg in a medium-size bowl and add the almond butter, bicarbonate of soda and sugar. Mix until everything is well combined. Fold in the chocolate chips. 
That's it! Your cookie dough is done.
Your cookie dough balls should measure approximately 1.5 tablespoons each. Place them (six at a time) onto your prepared baking sheets. Bake for 8 to 10 minutes. 
When you take them out the cookies will look very soft, but fear not! Once they've been allowed to cool a little (10 mins on the tray, before you transfer them to a wire rack to cool completely) they'll be just perfect. 

Apparently almond butter is full of mono saturated fat which makes your skin glow and your hair shine. Well, that's enough reason for me to eat another cookie :)
